Badger First Gold & Elwell Fruit Farm Baked Apples

Badger First Gold is used to soak the sultanas for this recipe, and then again as part of the baking sauce. Serves 4

Method:

Soak the sultanas in just enough Badger First Gold to cover, until they become plump Set the oven to 180c (350 f) gas 5. Core the apples and place them in a shallow dish just big enough to hold all 4 of them snugly. Cream the butter, sugar and spices together, then drain the sultanas (reserving the Badger First Gold marinade) and add to the mix. Stuff the apples with the sultana mix, pressing well into each cored cavity. Top each apple with an additional knob of butter and drizzle two tablespoons of the reserved marinade into the bottom of the dish. Add just enough cold water to cover the bottom of the dish, then place in oven and cook for 30-35 minutes. Serve with cream or, if you are really feeling indulgent, a drizzle of golden syrup.

1/2 cup Demerara sugar
1 large tbsp butter
1/2 tsp cinnamon
pinch of nutmeg
1/3 cup sultanas
