A delicious alternative accompaniment to the sausages in recipe card 6, or substantial enough as a vegtarian main course. The elderflower notes of Badger Golden Champion complement perfectly the apples in the grain. Serves 4
Method:
Pre-heat oven to 200ºC/Gas 5. Fry leeks in butter for a couple of minutes until softened. Add the
apples (and garlic) and cook for 2-4 mins, season
to taste. Put the mixture in an ovenproof gratin
dish and cover with half the grated cheese. Cover
with a layer of overlapping slices of potato topped
with the remaining cheese and a small knob of
butter. Mix together remaining ingredients and
pour over the vegetables. Bake in the oven for 50
minutes to one hour depending upon thickness of
potato slices. Remove from oven when potatoes
are cooked and golden in colour.
Serve with good quality sausages or cold, sliced
ham and a green salad with a glass of Badger
Golden Champion ale.

55g butter or margarine
450g sliced leeks

Bramley apples
1 clove garlic (optional)
100g cheese of your choice, grated
750g potatoes, sliced thin
170ml double cream
120ml milk
1 1/2 tsp wholegrain mustard
Salt & pepper to taste
