Sugar Coated Muffins
Try making these delicious sugar coated muffins at home with First Call

2 heaped tbsp dried cranberries
1 heaped tbsp mixed peel
1 heaped tbsp sultanas
250ml Badger First Call
375g self raising flour
180g caster sugar
1/2 tsp salt
1 1/2 tsp mixed spice
120ml sunflower oil
1 large egg
100g caster sugar
1/4 tsp ground cinnamon
50g butter, melted
Place the cranberries, mixed peel and sultanas in a saucepan with 150ml Badger First Call ale, bring to a simmer and cook until all the beer has been absorbed and cool.
Preheat the oven to 190C, fan 170C, gas 5. Butter a 12 hole muffin tin.
Place the flour, caster sugar, salt and mixed spice in a bowl.
In a jug whisk together the sunflower oil, egg, buttermilk and remaining Badger First Call ale.
Pour the wet ingredients into the dry ingredients and mix together until smooth.
Place a tablespoon of the mixture into each muffin hole, divide the fruit between the muffins and then cover each one with the remaining mixture, and bake for 25 minutes until golden and firm to the touch.
Cool in the tin for 5 minutes then remove and cool on a wire rack.
Mix the sugar with the cinnamon, brush each duffin all over with melted butter and roll in the cinnamon sugar before serving.
